I have a two-year-old son, who has now become a picky eater. I think every toddler goes through this phase.

 

One thing I know I can make that he will eat is this delicious quick and easy Mexican quinoa.

 

We have enjoyed this meal at our house for years, and I am so glad that he loves it as much as we do.

 

 

The very first time I made this, I was experimenting with quinoa. I had never heard of it before but was anxious to try it out. So many people had raved about it to me.

 

 

I love using it as a meat replacement on nachos also. Something about the quick and easy Mexican quinoa and tortilla chips is just so YUMMY!

Servings

Ingredients

  • 1 Tbsp Olive Oil
  • Cloves Garlic
  • 1 Cup  Quinoa
  • 1 Cup Chicken Broth
  • 1 Can Corn
  • 1 Can Black Beans
  • 1/2 Cup Salsa
  • 2 tsp Chili Powder
  • 1 tsp Cumin
  • Salt and Pepper to taste
  • 1 Diced Avocado
  • Tortilla Chips (Optional)

Step by Step Instructions

Step 1

Heat olive oil in large skillet over high heat. Add garlic, and cook, stirring frequently until fragrant. About 1 minute

Step 2

Stir in Quinoa, chicken broth, salsa, corn, chili powder, cumin, salt and pepper. Bring to boil, cover, and reduce heat to summer until quinoa is cooked through, about 20 minutes

Step 3

Top with avocado, serve immediately Eat with tortilla chips (optional)
