Our household LOVES pancakes!

 

But once in a while, we need to cut down on the flour and sugar and make something a little more healthy.

 

This recipe is simple, quick and easy. 

 

It’s faster than making regular pancakes in my opinion, and such a healthier alternative. 

 

The chocolate chip addition is something my toddler LOVES. He loves to “help” make the pancakes.

 

By help I mean, just eat the chocolate chips, while I do the rest.

Ingredients

  • 2 Ripe Bananas
  • 4 Eggs
  • 2 Tbsp Coconut Flour
  • 2 Tsp Cinnamon
  • 2 Tsp Vanilla
  • Dark Chocolate Chips (Optional)
  • Maple Syrup

Step by Step Instructions

Step 1

Mash up the bananas, and mix in eggs, coconut flour, cinnamon, and vanilla. Mix in dark chocolate chips if using. I don’t have a measurement for the chocolate chips, I add some until it looks like enough.

Step 2

Heat pan on medium heat. I like using a cast iron pan, so make sure to use a non stick oil. A nonstick pan also works wonders if you don’t have a cast iron pan.

Step 3

Pour batter into evenly sized pancake shapes into pan. I use a 1/4 measuring cup, but be careful, the mixture is runny.

Step 4

Cook about 4 minutes, or until the pancake starts to lift easily off the pan, and flip. If you try and flip too early, parts of the pancake will still be runny.

Step 5

Cook another 2-3 minutes, it should be cooked thoroughly.

Step 6

Enjoy! top with maple syrup. Have some fruit around, it tastes good topped with strawberries, blueberries or raspberries!
