Chicken salad is one of my favorite summertime eats. I USED to love eating chicken salad sandwiches. It’s easy to make and easy to eat.

When my husband and I were on the Paleo diet, we still wanted to be able to eat or favorite foods, while staying true to the diet. 

Insert this amazing chicken salad recipe! 

Eating chicken salad lettuce wraps is even more refreshing in the summertime then eating a sandwich. This is lighter, and in my opinion more flavorful. 

This chicken salad recipe is the perfect light and refreshing Paleo recipe. It is quick and easy for busy nights, and the lefts overs taste amazing.

Can you eat mayonnaise on the Paleo diet?

The short answer is that, yes, mayonnaise can be Paleo – but there is more to it than just running out to the store and buying any jar of mayo. The mayonnaise found on the shelf will generally include ingredients that are not compliant, such as soybean oil. Read the ingredients, and make sure what you are buying is paleo friendly. I love Primal Kitchen’s original mayo.

Ingredients

  • 2/3 Cup Avocado Mayonnaise
  • 1 1/2 Tbsp Dijon Mustard
  • 1 Tsp  Fresh Lemon Juice
  • 1/2 Tsp Salt
  • 1/4 Tsp Garlic Salt
  • 1/4 Tsp Pepper
  • 1 Lb Chicken Thighs
  • 4 Hard Boiled Eggs
  • Celery Stalks, Finely Chopped

Step by Step Instructions

Step 1

Preheat oven to 400. Season chicken with salt and pepper and garlic salt. Bake Chicken for 20-25 minutes.

Step 2

While chicken is baking, mix first 6 ingredients together

Step 3

Finely chop chicken, eggs, and celery and mix in

Step 4

Serve in lettuce wrap or avocado
