I am always looking for quick and delicious weeknight dinners. Sometimes time is something I do not have a lot of.

 

I wanted to make BBQ chicken one night but didn’t want to cook the chicken and potatoes, and carrots all separate. So I threw them all into a skillet and mixed it with the BBQ, and it came out amazing.

 

Who knew something could be so simple, but also so delicious. This is something I definitely put into our rotation.

Ingredients

Skillet BBQ Chicken, Potatoes, and Carrots

  • 2 Tbsp Butter
  • 2 Tbsp Olive Oil
  • 1/3 Cup Water
  • 1.5 Cup Carrots – Cut into 1 inch pieces
  • 3-4 Peeled Potatoes – Cut into 1 inch pieces
  • 1 Pound Chicken Thighs
  • 1 Clove Garlic
  • 1/2 Cup BBQ Sauce
  • Salt and Pepper to Taste

 

Step by Step Instructions

Step 1

Heat oil and butter in a large skillet over medium heat

Step 2

When butter has melted, add the potatoes and carrots. Add the water, cover and cook for 7 minutes

Step 3

Remove the lid (don’t stir yet) and cook for 3 more minutes and then stir, trying to flip the potatoes. Push the carrots and potatoes to the side, making a circle in the middle and add chicken. Season with salt and pepper. Cook for 3 minutes and then flip the chicken and cook until no longer pink (about 5 minutes)

Step 4

Stir in the garlic and BBQ sauce and let it simmer and stir for 3-5 minutes, letting the sauce thicken and caramelize the chicken and veggies.

Step 5

Serve on plate and enjoy
